## Tools

Steamer, Steamer basket, Wok, Cleaver / chef's knife, Cutting board

## Method (7 steps)

1. **Ingredient Prep** — Trim the pork skin and cut into thin slices measuring 2cm x 6cm x 0.5cm. Trim the celery leaves and root, then cut into 2cm pieces. Slice, julienne, or mince the scallion, ginger, and garlic as required.
   - Duration: 10 min
   - Tip: You can ask the butcher to cut the pork for you.
   - Tip: Cut the celery pieces in half lengthwise so they absorb more flavor.

2. **Season the Wok and Stir-Fry the Pork** — Heat the wok until it smokes, add 3ml of cooking oil to season it, then pour the oil out. Add fresh oil, then stir-fry the pork slices, scallion, ginger, garlic, and dried red chilies evenly for 1 minute.
   - Duration: 2 min
   - Tip: Seasoning the wok prevents the pork from sticking.

5. **First Noodle Steaming** — Bring the steamer to a boil until steam rises. Spread the noodles evenly on the steamer basket and steam for 15 minutes. Remove and toss them apart on the cutting board to cool.
   - Duration: 20 min
   - Tip: If the noodles are too long, you can pull them apart.
   - Tip: Handle the noodles gently to avoid tipping the steamer basket into the water.

   - Duration: 10 min
   - Tip: Spread them out as much as possible to avoid clumping.

- When cutting the pork, you can ask the market butcher for help; the best time to ask is before paying.
- Beginners should prep all ingredients in advance; once experienced, you can steam the noodles and stir-fry the vegetables concurrently.
- Spread the noodles out as much as possible during both steamings to avoid sticking.
- Beer pairs well with this dish.
