## Ingredients

- 70-230 g Noodle ingredients (面食材料) — per serving
  - Tip: You can choose handmade noodles, dragon-whisker noodles, noodle fish, instant noodle cakes, or various glass noodles.
- 200-400 ml Cold water (冷水) — per serving
  - Tip: Filtered water is recommended for a better taste.
- to taste (volume about with dough the same as) Vegetables (蔬菜类)
  - Tip: Lettuce, spinach, oil wheat greens, green peppers, tomatoes, carrots, and more.
- to taste Salt (盐)
  - Tip: Basic seasonings.

### Optional

- to taste (volume about with dough the same as) Meat / eggs / soy products (肉类/蛋类/豆制品)
  - Tip: Beef, lamb, fish, shrimp, eggs, or tofu skin for a mix of meat and vegetarian options.
- to taste Ground pepper (胡椒粉)
  - Tip: To boost the flavor.
- a pinch Sesame oil (香油)
  - Tip: To add aroma just before serving.

## Tools

Pot, Cleaver / chef's knife, Cutting board, Pot lid, Soup ladle

## Method (7 steps)

1. **Prep the Ingredients** — First, cut the vegetable ingredients into pieces no larger than 4cm on a side so they cook through easily.
   - Duration: 5 min
   - Tip: Cutting pieces to a uniform size ensures they cook at the same time.
   ![Step 1: Prep the Ingredients](https://media.githubusercontent.com/media/zkeq/vibe-cook-backend/dataset/images/steps/staple_tang-mian/step_1.jpg)
2. **Prepare Raw Meat (Optional)** — If using raw meat, first place it in cold water, cover with the pot lid, and bring to a boil. Skim off the blood foam on top, then turn off the heat and remove the partially cooked meat to set aside.
   - Duration: 10 min
   - Tip: Starting with cold water makes it easier to draw out the blood foam.
![Step 2: Prepare Raw Meat (Optional)](https://media.githubusercontent.com/media/zkeq/vibe-cook-backend/dataset/images/steps/staple_tang-mian/step_2.jpg)
3. **Boil the Water** — First heat the water to a boil over high heat, then reduce to medium heat.
   - Duration: 5 min
   - Tip: Use enough water to fully submerge the noodles added later.
   ![Step 3: Boil the Water](https://media.githubusercontent.com/media/zkeq/vibe-cook-backend/dataset/images/steps/staple_tang-mian/step_3.jpg)
4. **Cook the Slow-Cooking Ingredients** — Add the ingredients that take longer to cook (such as partially cooked meat or shiitake mushrooms) to the pot. Once boiling, cook for 10 minutes; for particularly tough large pieces, add an extra 5 minutes.
   - Duration: 10 min
   - Tip: Make sure the meat and firm vegetables are fully cooked through.
   ![Step 4: Cook the Slow-Cooking Ingredients](https://media.githubusercontent.com/media/zkeq/vibe-cook-backend/dataset/images/steps/staple_tang-mian/step_4.jpg)
5. **Cook the Noodles** — Add the noodles to the pot and stir gently to ensure the noodles and broth are well combined. Keep the surface at a gentle simmer and cook for 5 minutes.
   - Duration: 5 min
   - Tip: If white foam forms after adding the noodles, lift the pot lid to vent or remove it.
   ![Step 5: Cook the Noodles](https://media.githubusercontent.com/media/zkeq/vibe-cook-backend/dataset/images/steps/staple_tang-mian/step_5.jpg)
6. **Add the Quick-Cooking Vegetables** — Add ingredients that cook quickly, such as leafy greens, to the pot. Stir gently to fully submerge them and cook for 2–5 minutes.
   - Duration: 3 min
   - Tip: Don't overcook the greens, or they'll lose their color and nutrients.
   ![Step 6: Add the Quick-Cooking Vegetables](https://media.githubusercontent.com/media/zkeq/vibe-cook-backend/dataset/images/steps/staple_tang-mian/step_6.jpg)
7. **Season and Serve** — Turn off the heat, then add salt, ground pepper, sesame oil, or any other seasonings you like. Stir gently and serve.
   - Duration: 1 min
   - Tip: Seasoning after turning off the heat gives you better control over the saltiness.
   ![Step 7: Season and Serve](https://media.githubusercontent.com/media/zkeq/vibe-cook-backend/dataset/images/steps/staple_tang-mian/step_7.jpg)

## Tips

- Feel free to adjust the steps to your taste — experimenting often leads to pleasant surprises.
- If you're unsure about the amount of salt, add it in small amounts at a time to avoid over-salting.
