## Ingredients

- 2 pieces (about 100 g Beaten eggs) Eggs (鸡蛋) — per serving
  - Tip: Choose fresh eggs for a more tender, delicate taste.
- 100-120 ml Warm water or stock (温水或高汤) — per serving
  - Tip: Use warm water at 40–50℃; avoid cold water or boiling water.
- 1 g Salt (食盐) — per serving
  - Tip: Regular salt works fine.
- a few drops Sesame oil (香油) — per serving
  - Tip: Pure stone-ground sesame oil has a richer aroma.

### Optional

- 2 ml Light soy sauce (生抽)
  - Tip: Use a light-colored light soy sauce so it doesn't affect the final color.

## Tools

Heatproof bowl, Plastic wrap or microwave-safe lid, Sieve, Toothpick, Microwave

## Method (6 steps)

1. **Beat and Mix** — Beat the eggs, then add warm water or stock, salt, and light soy sauce. Stir gently to combine, avoiding bubbles as much as possible.
   - Duration: 1 min
   - Tip: Stir gently to prevent too much air from being incorporated.

2. **Strain the Egg Mixture** — Pour the egg mixture through a sieve into a heatproof bowl. If there are bubbles on the surface, gently pop them with a toothpick.
   - Duration: 1 min
   - Tip: Straining is key to achieving a smooth, fine texture.
   - Tip: Popping bubbles ensures a smooth surface.

3. **Seal and Prepare** — Cover with plastic wrap and poke 8–10 small holes, or use a microwave-safe lid (leaving a gap).
   - Duration: 30 sec
   - Tip: Poking holes prevents excessive internal pressure from causing the surface to burst.
   ![Step 3: Seal and Prepare](https://media.githubusercontent.com/media/zkeq/vibe-cook-backend/dataset/images/steps/breakfast_wei-bo-lu-zheng-dan/step_3.jpg)
4. **Microwave** — Place in the microwave and heat: at 700W, heat for 1 minute 30 seconds, then add 20–30 seconds as needed; or adjust time according to 600W/800W power.
   - Duration: 2 min
   - Tip: For your first attempt, heat in short increments.
   - Tip: Heat until the surface has just set.
   ![Step 4: Microwave](https://media.githubusercontent.com/media/zkeq/vibe-cook-backend/dataset/images/steps/breakfast_wei-bo-lu-zheng-dan/step_4.jpg)
5. **Rest with Residual Heat** — After heating, remove and let it rest for 1 minute.
   - Duration: 1 min
   - Tip: Use the residual heat to fully cook the center, avoiding overcooking that makes it tough.
![Step 5: Rest with Residual Heat](https://media.githubusercontent.com/media/zkeq/vibe-cook-backend/dataset/images/steps/breakfast_wei-bo-lu-zheng-dan/step_5.jpg)
6. **Final Seasoning** — Drizzle with sesame oil and sprinkle with chopped scallions. Serve.
   - Duration: 30 sec
   - Tip: Adjust the amount of scallions to taste.

## Tips

- Water temperature should be 40–50℃; do not use water that is too hot.
- For the best texture, keep the egg-to-water ratio between 1:1 and 1:1.2.
- Covering with plastic wrap and poking holes prevents the surface from bursting or forming honeycomb pockets.
- Straining significantly improves smoothness.
- If the surface bubbles or releases water, it has been overcooked—shorten the time next time.
